DID YOU KNOW?? Why does broccoli smell worse the longer you cook it? Broccoli (and brussel sprouts for that matter) contain naturally occuring mustard oil. (isocyanates) When this chemical is heated, it breaks down to very foul smelling, hydrogen sulfide and ammonia. Cooking these vegetables in aluminum (which no one should use anyway) makes this reaction even worse. To decrease the smell during cooking, place a piece of fresh bread on top of the broccoli..the bread absorbs some of the odour. Make sure you discard the bread afterwards.
